Diabetic Recipe: Baked Rutabaga Fries

Makes eight servings 

Ingredients  

  • 2 medium-sized rutabagas  

  • ¼ cup olive oil

  • Salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees.
  • Peel and cut the rutabaga to your desired thickness, no more than ¼ inch wide.
  • In a large bowl, toss the rutabaga slices in the oil.
  • Place them, evenly spaced, on a non-stick surface or baking sheet.
  • Bake for 40 minutes or until crispy on the outside, but cooked and soft on the inside.
