Diabetic Recipe: Grilled Shrimp and Sausage Skewers

Grilled Shrimp and Sausage Skewer Recipe

Makes eight servings

Ingredients  

  •  lbs large raw shrimp, peeled and deveined
  • 1 package of Al Fresco Fully Cooked Chicken Sausage (various flavors to choose from)
  • 8 grilling skewers
  • ¼ cup butter OR coconut oil, melted
  • 1 small hot red chili pepper OR Tablespoon of paste (or preferred seasoning)
  • 2 cloves garlic, crushed OR 2 teaspoons garlic paste
  • ½ teaspoons each of salt and pepper

Instructions

1. Preheat grill to medium high.

2. Mix the butter, chili pepper/seasoning, garlic, salt and pepper in a bowl and set aside.

3. Cut each sausage into eight even slices and add four slices of sausage and four shrimp to each skewer, alternating per the photo.  

4. Brush both sides of skewers with the mixture. Grill for 2-3 minutes per side, until shrimp are cooked.
 
5. Salt and pepper to taste.
